Mountain Water-Processed Decaf

Decaf Peru

The mountain water process involves using glacial mountain water to float beans through a decaffeinating solvent that binds to caffeine.  The mixture is then heated to remove caffeine, and the water is returned to the beans.  This method of decaffeination allows for not only a cleaner coffee, but results in a slightly bolder decaf coffee with all of the nutty tones and subtle chocolate taste of a high quality Brazilian bean.  The final result is a round, mildly acidic decaf coffee that’s packed with flavor.

Cupping Notes: Dark chocolate and walnuts

Organic

Organic coffee growers do not use synthetic fertilizers or chemicals in growing or production, which means cleaner beans, air, land, and water. The coffee is grown with only organic fertilizers, like coffee pulp or compost.

Sumatra

An earthy, musty, and full-bodied coffee, Sumatra is a favorite of coffee lovers due to its intensity of body and flavor.  Coffees in Sumatra are traditionally processed using a method called wet-hulling which results in a coffee that leaves the farm with a much higher moisture content than other methods used more popularly.  This processing method creates the earthy, wild, and spicy descriptors that come to mind for Sumatra drinkers.

Cupping Notes: Bakers chocolate with a hint of cedar and pine
